  • It’s funny how you take the knife to your arm hair. My dad always would do that with a sharp knife and now I always find myself doing that as well. Makes me laugh and smile at the same time. And as I watch further into the video I’m laughing more inside. My sister gives me a chef knife every year for my birthday, as soon as I take it out of the box I always slice it through a piece of paper. This is too great. Bench to belt grinders are also great for axes and hatchets, courtesy of pops. Lol. The window is a new one for sure, but totally makes sense.

  • People need to realize the difference between sharpening and honing.. a steel honing rod only straightens out the burr on a knife it won't really sharpen it. When you sharpen a knife you are shaping the profile of the blade and removing the burr whereas with a honing steel you are straightening the burr and or creating a burr. The sharpness is very temporary because that burr just folds over when you cut with it.

  • Unfortunately I disagree with some of these techniques, when working with a sharpening stone you should be refining it until you polish off the wire edge, not a set amount of strokes like 5

  • I use Work Sharp Ken Onion sharpener set for my EDC and Hunting Knives . For kitchen knives I use mainly ceramic knives. Super Sharp and never need sharpen . I've had one for 3 years that I use 4 or 5x a week and it can still shave my arm.. Obviously ceramic doesn't work for fillet knives. So I have Victorinox Fillet Knife . The Work Sharp is an awesome tool for sure . I agree 100% using belt works the best .

  • you miss the last 2 inches of every blade pass every time you use the stone. you lift up the heel. The far best way to sharpen a knife is to use an 8 inch MDF loaded with compound on a grinder. 2 wheels is best. one rough, one fine compound. If you are establishing an edge, use TSPROF or something homemade that is similar. This method takes both practice and time. most people can't do this. or dont want to. And im a swordsmith!!!!

  • Love to see this. I use a slighly different array of grits and finishers but the results are the same. I found the 120 grit to be too agressive for most knives so i tend to start at 240 grit unless there isnt an edge to begin with.

  • I use an Edge Pro Apex to sharpen my expensive knives. For kitchen knives I use one similar to the first one you showed. Using the Edge Pro on a kitchen knife doesn't make sense. takes too long and gets them too sharp. They usually need to be resharpened after a few uses because the edge gets folded over. With the cheap sharpener you just stroke it until it cuts the shoulder off and grabs the blade, then about 5 hard passes followed by about 5 very light passes and it will easily cut anything you have in the kitchen. By the way if you learn to fell for the burr you'll take your sharpening to the next level. When the burr flips back and forth with one light pass it's time to hone. Btw, the beauty of the HF belt sanded is you get a convex edge from it. I have a work sharp I use for knives that need that type of edge. Sharpening was a hobby of mine a few years ago.

  • Belt sanders take too much material off. And it's far too easy to round the tip off. Use a guided system, I like the Tormek. Also "sharpening until it's shiny?". No. Sharpen until you feel a burr, flip and repeat. Spyderco sharpmaker is a better solution than anything seen here. And its easy to use.
