  • If I'm not mistaken, Guga is somewhere down in SE Florida. I'd have to imagine a more substantial collab is within possibility of arranging. Maybe a single mega-episode or series (2-3) of episodes where you do catch clean cook of different game (fish/lobster/hog/deer) and different cooking styles (dry aged, sous vide, grill, etc). Would be some epic youtube.

  • Actually the sirloin tip, also known as round tip, or football roast has some very tender cuts of its broke down and all the sinew removed. The sinew is what makes a steak cut from a sirloin tip not broke down so chewy and tough, not the meat. Also get you a a cooler and leave the hide on while it ages to keep the outer layer from turning black and hard. That meat had to shrink by half

  • Dry aging in the refrigerator works for other meats too. Try 24 to 48 hours with squirrel meat. You will love the taste.

  • rob you did a little booboo there you basted the raw side of the meat you should sear both sides first and then start basting with the butter you want that juicy goodness to stay inside under a nice crust with basting the raw side you could run the risk of drawing moisture out because most kinds of butter are slightly salty its a little mistake that quite some folks make but now you know better.

  • My family has been dry aging all of our wild game since I was little. We Are lucky and have always had cold enough temps to just hang our deer and elk in our shed and dry age whole animals. I'd it gets to warm during the day a cheap window A/C unit does a perfect job.

  • Looked great rob! But just a tip, when you dry age, the meat loses a lot of water, so consequently, it cooks faster/is easier to dry out. Just something to keep in mind in the future. Cheers
